A Day at a Farm with Søren Wiuff

Any Copenhagener into gastronomy knows Søren Wiuff and every year it is the talk of the town when his asparagus becomes available. Søren is a truly unique farmer and his “rock and roll” approach to farming transcends everything he does. Though he does not use chemicals when farming Søren is not an organic farmer, he simply does not like the dogma. This dogma-free approach is very apparent in his trust in the power of nature's own wilfulness. To him, modern society is all about control - controlling one’s time, body and mind. But Søren has found that letting go of that control is beneficial for his produce as it has allowed him to discover new farming methods and varieties. This approach has made him one of the most forward-thinking farmers in Denmark and his stunning carrots and beautiful asparagus has made him a prominent purveyor for some of the best Danish restaurants such as our very own Marchal and Noma. Søren learns the most when in doubt and this valuable lesson you will explore together with him at his farm outside of Copenhagen. Together at his farm you will feel the soil between your hands and spend the afternoon harvesting.
