On 29 September, these two culinary worlds come together as Mathias Dahlgren and his team from Seafood Gastro join Alexander Baert and the Marchal team for an exclusive Four Hands Dinner, where Swedish and Danish gastronomy unite for one exceptional evening.
Meet the chefs
Mathias Dahlgren is one of Sweden’s most celebrated chefs and the first and only Swede to have won the prestigious Bocuse d’Or. Throughout his career, he has helped shape contemporary Scandinavian gastronomy through his culinary expertise, creative vision and a philosophy he refers to as The Natural Cuisine. Today, Mathias is the driving force behind several acclaimed restaurants, including the Michelin-starred Seafood Gastro at Grand Hôtel Stockholm.
Here, his philosophy comes to life through a gastronomic exploration of everything that lives in, on, or by the water. The menu ranges from fish and shellfish to seabirds, algae and coastal plants, with a strong focus on wild Scandinavian ingredients.
Alexander is Head Chef of Marchal, where Nordic and French cuisine are brought together in harmonious balance, inspired by the love story of the Frenchman Jean Marchal and the Dane Maria Coppy, founders of d’Angleterre.
After a decade of working with some of the world’s greatest chefs — Alain Ducasse and Rasmus Kofoed, to name just two — Alexander is now pursuing his own culinary vision. His cuisine is delicate yet bold, rooted in seasonality and elevated through impeccable sauces. With a passion for reinterpreting classic dishes, he brings a contemporary perspective, playing with textures and flavours to create memorable dining experiences.
Together, these two remarkable chefs form a compelling and inspired partnership, showcasing the extraordinary diversity of the Scandinavian culinary landscape on this special autumn evening.
